Ozilgen (food engineering, Yeditepe U., Turkey) presents a textbook for students of chemical engineering using the principles and techniques of that field to model food processing. He works on the rule of obtaining 80% of the total possible benefits within the 20% of the highest attainable modeling difficulty level. A particular feature is the large number of fully worked examples from almost every conceivable food process and mostly based on real data. After introducing process modeling, the text covers transport phenomena models, kinetic modeling, mathematical modeling in food engineering operations, and statistical process analysis and quality control. The second edition differs substantially from the first, which was titled Food Process Modeling and Control, Chemical Engineering Applications and published by Gordon and Breach, Amsterdam in 1998.
