本書《南瀛歷史、社會與文化Ⅶ》，是根據2023 年舉行的第七屆南瀛研究國際學術研討會上報告的論文，經過審查程序編纂而成。那一年，剛好也是南瀛國際人文社會科學研究中心（以下簡稱南瀛研究中心）成立二十週年的大日子，在此特向二十年來陪伴和支持我們成長的臺南縣政府及後來縣市合併的臺南市政府文化局等各單位，還有那些一直以來協助中心發展的每個人，致上最誠摯的謝意。本書中，由南瀛研究中心學術委員林玉茹教授所撰寫〈臺南研究的國際化與在地化：南瀛國際人文社會科學研究中心20 年〉一文，已詳細地論述中心從成立至今的歷史。標題中的「國際化」和「在地化」這兩個概念，正顯示了中心一直以來的目標。也就是說，我們是以國際的視野來進行臺南研究，藉由邀請海外的研究者擔任學術委員會的成員，並推動與結合在地研究人員以及有志於臺南研究的各界人士，目的就是以臺南研究來發展在地研究。其中，最具代表性的活動，就是2005 年首次召開的「南瀛研究國際學術研討會」。每次都會延請許多來自海外的發表人，並且吸引大量的聽眾湧入會場，於是提供了互相交流的機會。讓南瀛研究研討會儼然已成為「國際化」與「在地化」交流與對話的平臺。每次研討會之後，南瀛研究中心都會集結出版專書《南瀛歷史、社會與文化》系列專書。每篇論文都必須經過非常嚴格的審查，通過之後才接受出版。因此，我很肯定作者們的努力和付出；同時，我也要向擔任審查並提供良善修訂建議的審查人們，表達由衷地感謝。在這樣的合作與熱情下，該系列專書自2008 年出版第一集以來，不曾間斷，持續出版著。從第三屆開始，每屆研討會都會設定一個主題，第七屆則是「臺南港市與周邊」（Tainan Port City, Hinterland and Networks）。每篇論文的內容，都突顯著臺南作為一座港市是如何地透過港口與內陸，甚至海外相互聯繫起來。而在綜合討論，則以「南瀛研究做為全球在地研究的典範」為題進行圓桌論壇。讓我們再一次體會到，面對世界各地多元的變化，關注每個地區如何回應的重要性，這也就是以全球的眼光來俯瞰「臺南」的重要性所在。同時這也進一步提示，因著臺南有一個與海外保持密切聯繫的研究組織——南瀛研究中心之存在，讓以「臺南」為出發，進而以全球在地化的角度來重新開展臺南研究的可行性是非常高的。第七屆研討會同時也是慶祝本研究中心成立二十週年的日子，臺南市政府文化局為了表達由衷支持，利用此機會
