作者簡介
Arno Schmidt is a former Executive Chef and has written a number of books on various aspects of food and drink management in the hotel industry, among other works.
Paul Fieldhouse is Adjunct Professor of Nursing at the University of Manitoba and Nutrition Research and Policy Analyst for Manitoba Health. He is the author ofFood and Nutrition: Customs and Culture (1995) and other books and essays on nutrition and religion and food practices.
